Ingredients:
⦁ 1 romaine lettuce, chopped
⦁ 1 cucumber, chopped
⦁ 2 tomatoes, chopped
⦁ 1/4 red onion, thinly sliced
⦁ 1/2 cup fresh parsley, chopped
⦁ 1/2 cup fresh mint, chopped
⦁ 1 gluten-free pita bread (optional), toasted and chopped
⦁ 1 teaspoon sumac
⦁ Juice of 1 lemon
⦁ 3 tablespoons of extra virgin olive oil
⦁ Salt and pepper to taste
Instructions:
⦁ Prepare the base: In a large bowl, mix the romaine lettuce, cucumber, tomatoes, red onion, parsley and fresh mint.
⦁ Make the dressing: In a small bowl, combine the olive oil, lemon juice, sumac, salt and pepper. Mix well until emulsified.
⦁ Top the mixture: Pour the dressing over the vegetables and toss gently to ensure all ingredients are well coated.
⦁ Add the finishing touch: Just before serving, add the toasted pita bread pieces to maintain its crunchy texture.
