Ingredients:
⦁ 1 cup brown lentils
⦁ 1/2 cup basmati rice
⦁ 3 large onions, thinly sliced
⦁ 1 teaspoon ground cumin
⦁ 1/2 teaspoon ground cinnamon
⦁ 1/2 teaspoon black pepper
⦁ 4 cups of water or vegetable broth
⦁ Olive oil
⦁ Salt to taste
Instructions:
⦁ Cook the lentils in water until they are tender but firm. Drain and set aside.
⦁ In a large skillet, heat the olive oil and cook the onions over low heat until golden and caramelized. Remove half of the onion and set aside for garnish.
⦁ In the same pan, add the rice, lentils, cumin, cinnamon and black pepper. Cook for 1-2 minutes.
⦁ Add water or broth and salt. Cover and simmer until rice is done.
⦁ Serve hot, garnished with the reserved caramelized onions.
