Vegetable burgers with salad

Ingredients

  • 1 carrots
  • 80g pumpkin 
  • ½ zucchini
  • ¼ onion
  • 1 tbsp. of flour
  • 1 eggs
  • 25 g oat flakes
  • 1 tbsp. olive oil

Instructions

For the vegetable burgers, peel the carrots and grate them on a coarse grater.
Cut the pumpkin in half, remove the core and also grate coarsely.
Wash and grate the zucchini.
Peel the onion and cut it small.
Heat 1 tablespoon of olive oil in a saucepan and cook the vegetables for 5 minutes over medium heat.
Pour the mixture into a bowl and let it cool for 2 minutes. Add the eggs, flour and oat flakes and season to taste. Let infuse for 10 minutes.

Heat a non-stick pan. With lightly floured hands, form 8 burgers of the same size and cook them in the pan on both sides. 

Serve together with a delicious salad of varied and fresh vegetables.
