Ingredients:
⦁ 1 cup carrots, shredded
⦁ 1 cup broccoli, florets
⦁ 1 cup bell peppers, sliced
⦁ 1/2 cup bamboo shoots
⦁ 1/2 cup mushrooms, sliced
⦁ 2 cloves garlic, minced
⦁ 2 tablespoons low sodium soy sauce
⦁ 1 tablespoon sesame oil
⦁ 1 tablespoon cornstarch (optional, to thicken)
⦁ 1/2 cup water
Instructions:
⦁ Sauté the garlic in sesame oil. Add the vegetables and sauté for 5 minutes.
⦁ Mix the cornstarch with water and add it along with the soy sauce. Cook until it thickens.
⦁ Serve hot as a main dish or side dish.
