Ingredients
- 4 calamari
- 2 bunches of spinach
- 3 cloves of garlic
- 1 piece of ginger (size of a garlic clove)
- A pinch of turmeric
- Sea salt
- Extra virgin olive oil
Instructions
In a pot with 1/2 cup of water, cook 2 bunches of spinach with a pinch of sea salt for a few minutes. Drain and set aside. In a pan with a drizzle of olive oil, add 3 cloves of garlic, a pinch of turmeric, sea salt, a piece of ginger (the size of a garlic clove), and 4 sliced calamari. Sauté until the calamari starts to “jump,” then add the spinach. Stir everything together for a few minutes.
Calamari with Spinach is a delicious and surprising combination. Adding a splash of coconut milk can make it a more substantial meal. Remember, green leaves are detoxifying and rich in antioxidants, and should be cooked briefly to retain their nutritional properties.
