Cucumber and Sesame Salad (Japan)

Ingredients:

⦁ 2 cucumbers, thinly sliced

⦁ 1 teaspoon salt

⦁ 2 tablespoons of rice vinegar

⦁ 1 teaspoon low sodium soy sauce

⦁ 1 teaspoon of sugar or stevia

⦁ 1 teaspoon sesame oil

⦁ 1 tablespoon toasted sesame seeds

Instructions:

⦁ Sprinkle salt over the cucumber slices and let them sit for 10 minutes. Rinse and drain.

⦁ Mix the vinegar, soy sauce, sugar and sesame oil.

⦁ Pour the dressing over the cucumbers and sprinkle with sesame seeds.
