Ingredients:
⦁ 1 eggplant
⦁ 1 red pepper
⦁ 1 onion
⦁ 2 cloves of garlic
⦁ 2 tablespoons olive oil
⦁ Salt and pepper to taste
Instructions:
⦁ Roast the eggplant, pepper, onion and garlic in the oven at 200°C for 30-40 minutes.
⦁ Peel the roasted vegetables, cut them into strips and place them on a plate.
⦁ Drizzle with olive oil, salt and pepper before serving.
