Ingredients:
⦁ 4 small peppers, zucchini or eggplants
⦁ 1 cup of rice
⦁ 1/2 cup crushed tomatoes
⦁ 1 onion, chopped
⦁ 1/2 cup fresh parsley, chopped
⦁ 1 teaspoon cinnamon
⦁ 1 teaspoon allspice
⦁ Salt and pepper to taste
⦁ 1/4 cup olive oil
Instructions:
⦁ Empty the vegetables and set them aside.
⦁ Mix the rice with the crushed tomato, onion, parsley, spices and olive oil.
⦁ Fill the vegetables with the mixture and place them in a pot.
⦁ Add water until the vegetables are half covered and simmer for 40-50 minutes.
