- 2 tomatoes
- 1/2 an avocado
- Grated carrot

- 2 cups cooked chickpeas
- Juice of 1/2 lemon or lime
- 1 tbsp white tahini (or 2 tbsp sesame seeds)
- 1 clove of garlic (optional)
- Sea salt
- 2 tbsp extra virgin olive oil
- A splash of water
- Cumin (optional)
Instructions for Salad
In a bowl, combine your choice of green leaves, 2 tomatoes, 1/2 an avocado, and grated carrot. Season with salt and drizzle with extra virgin olive oil.
Instructions for Hummus
Blend 2 cups of cooked chickpeas, the juice of 1/2 a lemon or lime, 1 tbsp white tahini (or 2 tbsp sesame seeds as an alternative), 1 clove of garlic (optional), sea salt, 2 tbsp extra virgin olive oil, a splash of water, and cumin (optional) in a food processor or blender until smooth. Add a splash of water if the mixture is too thick. Add the hummus to the salad and serve.
