Minestrone (Italy)

Ingredients:

⦁ 1 carrot, diced

⦁ 1 zucchini, diced

⦁ 1 potato, cubed

⦁ 1/2 cup green beans

⦁ 1/2 cup crushed tomatoes

⦁ 1 liter of vegetable broth

⦁ 1/2 cup cooked white beans

⦁ 2 cloves garlic, minced

⦁ 2 tablespoons olive oil

⦁ Fresh basil for garnish

Instructions:

⦁ In a pot, heat the olive oil and sauté the garlic.

⦁ Add all the vegetables, except the beans, and cook for 5 minutes.

⦁ Add the crushed tomatoes and broth, and cook over medium heat for 25 minutes.

⦁ Stir in the beans at the end and serve with fresh basil.
