Ingredients

  • 4 carrots
  • 1 beetroot
  • 2 potatoes
  • 1 onion
  • Garlic cloves
  • 1/2 lemon
  • Extra virgin olive oil
  • Sea salt
  • Aromatic herbs (parsley, cilantro)
  • 1 apple (optional)

Instructions

Peel and chop 4 carrots, 1 beetroot, 2 potatoes, 1 onion, and an optional apple (keep the skin on the apple). Arrange these along with some garlic cloves and 1/2 a lemon in a baking dish. Season with sea salt, drizzle with extra virgin olive oil, and sprinkle with aromatic herbs (parsley, cilantro). Roast in the oven at 180°C (356°F) for about 20 minutes or until the vegetables and potatoes are tender.

This method enhances the natural flavors and textures of the vegetables, making them a tasty and convenient addition to any meal.
