Instructions
Peel and chop 4 carrots, 1 beetroot, 2 potatoes, 1 onion, and an optional apple (keep the skin on the apple). Arrange these along with some garlic cloves and 1/2 a lemon in a baking dish. Season with sea salt, drizzle with extra virgin olive oil, and sprinkle with aromatic herbs (parsley, cilantro). Roast in the oven at 180°C (356°F) for about 20 minutes or until the vegetables and potatoes are tender.
