Ingredients:

⦁ 1 eggplant, sliced

⦁ 1 zucchini, sliced

⦁ 1 red bell pepper, sliced

⦁ 2 tomatoes, chopped

⦁ 1 onion, chopped

⦁ 2 cloves garlic, minced

⦁ 2 tablespoons olive oil

⦁ Herbs of Provence to taste

⦁ Salt and pepper to taste

Instructions:

⦁ Sauté the onion and garlic with olive oil in a frying pan.

⦁ Add the tomatoes and cook until they form a sauce.

⦁ Add the vegetables in layers over the sauce, sprinkle with Provencal herbs, salt and pepper.

⦁ Cover and simmer for 20 minutes.
