Shakshuka with Arabic Bread Toasts

Ingredients:

⦁ 4 ripe tomatoes, chopped

⦁ 1 red bell pepper, chopped

⦁ 1/2 onion, chopped

⦁ 2 cloves garlic, minced

⦁ 3 eggs

⦁ 1 teaspoon ground cumin

⦁ 1/2 teaspoon paprika

⦁ Olive oil

⦁ Salt and pepper to taste

⦁ Whole wheat or gluten-free pita bread

Instructions:

⦁ In a large skillet, heat olive oil and sauté onion, garlic and red pepper until tender.

⦁ Add the tomatoes, cumin and paprika. Cook for 10 minutes.

⦁ Make small holes in the mixture and crack the eggs in. Cover the pan and cook until the egg whites are set.

⦁ Serve with toasted pita bread on the side.
