Ingredients:
⦁ 1 cup dried chickpeas (soaked overnight)
⦁ 1/2 onion, chopped
⦁ 3 cloves of garlic
⦁ 1 cup fresh parsley, chopped
⦁ 1/2 cup fresh cilantro, chopped
⦁ 1 teaspoon ground cumin
⦁ 1 teaspoon ground coriander
⦁ 1/2 teaspoon baking soda
⦁ Salt and pepper to taste
⦁ Oil for frying (or baking)
Instructions:
⦁ In a food processor, blend the chickpeas, onion, garlic, parsley, cilantro, cumin and ground coriander until you obtain a coarse paste.
⦁ Add the baking soda, salt and pepper, and mix again.
⦁ Form small balls or discs with the mixture.
⦁ Fry in hot oil until golden (or bake at 200°C for 20 minutes, turning halfway through).
⦁ Serve with tahini, pita bread or salad.
