Escudella and Carn d'Olla

Ingredients:

⦁ 1 ham bone

⦁ 1 piece of beef

⦁ 1 chicken thigh

⦁ 1 black sausage

⦁ 1 white sausage

⦁ 1 carrot

⦁ 1 leek

⦁ 1 turnip

⦁ 1/2 cabbage

⦁ 200 g cooked chickpeas

⦁ 2 potatoes

⦁ Galets pasta (optional for the soup)

Instructions:

⦁ Boil water in a large pot and add the ham bone, meat, chicken and chickpeas. Cook over low heat, skimming off any impurities.

⦁ Add the chopped vegetables and cook for 2 hours over low heat.

⦁ Remove the meat and vegetables. Strain the broth and cook it with the galets if you are making soup.

⦁ Serve the soup first, then the meat and vegetables as a second course, accompanied by salt and olive oil.
