Ingredients:

⦁ 4 ripe tomatoes, chopped

⦁ 1 red bell pepper, chopped

⦁ 1 onion, chopped

⦁ 3 cloves garlic, minced

⦁ 4 eggs

⦁ 1 teaspoon ground cumin

⦁ 1 teaspoon sweet paprika

⦁ 1 pinch chili powder (optional)

⦁ Olive oil

⦁ Salt and pepper to taste

⦁ Fresh cilantro or parsley to decorate

Instructions:

⦁ In a large skillet, heat the olive oil and sauté the onion, garlic and red pepper until tender.

⦁ Add the tomatoes, cumin, paprika and chili powder. Simmer for 10 minutes.

⦁ Make small holes in the tomato mixture and crack an egg into each hole.

⦁ Cover the pan and cook until the egg whites are set but the yolks are still runny.

⦁ Serve with fresh cilantro and accompany with whole wheat or gluten-free bread.
