10 fresh dates, seeded, coarsely chopped

1 cup (90g) rolled oats

1/4 cup (35g) reduced-sugar dried cranberries

1/4 cup (50g) pepitas (pumpkin seeds) toasted

2 tbsp almond butter

Instructions

Place the date in a food processor and process until a smooth paste forms. Transfer to a medium bowl. Add the oats, cranberries, pepitas and almond butter and stir until well combined.

Line a baking tray with baking paper. Use wet hands to roll tablespoonfuls of the date mixture into balls. Place on the prepared tray. Place in the fridge for 1 hour to set. Store in an airtight container for up to 2 weeks.
