- 1 zucchini
- 50 g feta cheese
- 5g sesame seeds
- 1 tbsp extra virgin olive oil
- 1 lemon
- Dried oregano
- Salt
- Ground black pepper
- Fresh mint leaves
Instructions
- Wash and slice the zucchini into rounds. Heat a grill pan and cook the zucchini for about two minutes on each side. It should be crisp, but not raw. Set aside.
- Mix the olive oil with a bit of lemon zest and two teaspoons of lemon juice. Add a pinch of dried oregano, salt, and black pepper, and whisk until well combined.
- To serve, place the zucchini rounds on a platter and top with crumbled feta cheese, fresh mint leaves (to taste), and a sprinkle of sesame seeds. Drizzle with the dressing and enjoy.
