• 1 zucchini
  • 50 g feta cheese
  • 5g sesame seeds
  • 1 tbsp extra virgin olive oil
  • 1 lemon
  • Dried oregano
  • Salt
  • Ground black pepper
  • Fresh mint leaves

Instructions

  1. Wash and slice the zucchini into rounds. Heat a grill pan and cook the zucchini for about two minutes on each side. It should be crisp, but not raw. Set aside.
  2. Mix the olive oil with a bit of lemon zest and two teaspoons of lemon juice. Add a pinch of dried oregano, salt, and black pepper, and whisk until well combined.
  3. To serve, place the zucchini rounds on a platter and top with crumbled feta cheese, fresh mint leaves (to taste), and a sprinkle of sesame seeds. Drizzle with the dressing and enjoy.
