Ingredients
- 300g salmon (boneless, skinless)
- 1 spring onion, chopped
- 1 tbsp chives, chopped
- Parsley, chopped
- Cilantro, chopped
- 1 garlic clove, minced
- Sea salt
- Black pepper
- Juice of 1 small lime or 1/2 lemon
- 2 tbsp buckwheat flour
- 1 egg, beaten
- Extra virgin olive oil
Instructions
Finely chop 300g of boneless, skinless salmon. Mix the salmon with 1 chopped spring onion, 1 tbsp chopped chives, chopped parsley, chopped cilantro, 1 minced garlic clove, sea salt, black pepper, the juice of a small lime or 1/2 lemon, 2 tbsp buckwheat flour (you can also use spelt or kamut flour), and 1 beaten egg. The mixture should be cohesive but not too thick.Heat a pan with a brush of extra virgin olive oil. When hot, add a heaped tablespoon of the salmon mixture and form it into a burger patty with the spoon. Cook for about 4 minutes on each side. Serve with a fresh green salad.
It's a great way to enjoy salmon in a different form, combined with fresh herbs and spices.
